Bread is most consumable wheat based bakery product. It contains high nutritive value. This is easy to digest therefore, its consumption is increasing very fast. Biscuits appear to have been first manufactured in India more than three centuries ago. With the development of biscuits came the development of several other products. Indian bakery industry is spreaded over all small scale, large scale and household sectors. Bread is manufactured through fermentation and baking process. The manufacturing process and techniques are so simple that they can easily be adopted for production at any level. Bakery products in India are now in common use. Biscuit is a solid product. It is crispy in taste. It is estimated to enjoy around 37% share by volume and 75% by value of the bakery industry. There is a good scope for new entrepreneurs to venture into this field.
The two major bakery products, biscuits and bread, account for 82% of all bakery production. The unorganized sector accounts for about half of the total biscuit production. It accounts for 85% of the total bread production and around 90% of the other bakery products (pastries, cakes, buns, rusks) estimated at 750,000 tonne.
The Indian biscuit market is estimated at around 2 mn tonne per annum of which the unorganized sector accounts for over 50% of the market share. The unorganized sector has some 30,000 small and tiny bakeries. The organized industry includes two large units, about 50 medium scale and approximately 2,500 small scale industry (SSI) units manufacturing biscuits and other bakery products.
Biscuits enjoy some 37% share by volume and 75% by value of the bakery industry. The organized sector caters to the medium and premium segments, which are relatively less price-sensitive. The organized sector is unable to compete due to the excise advantage enjoyed by the sector. The size of the bread market was estimated at close to Rs. 17 bn. A limited number of producers in the organized industry is supplemented by a large number of units in the unorganized sector.
The bakery industry in India is mainly popular in the states of Andhra Pradesh, Maharashtra, West Bengal, Karnataka, Tamil Nadu and Kerala. Around 60% of production takes place in the unorganized sector. There are around 2 mn unorganized bakeries in the country, comprising small bakery units, cottage and household type manufacturing. The organized sector consists of large, medium and small-scale manufacturers producing bread and biscuits. The market size for the bakery industry in India is expected to reach 47 bn by 2015 with a growth of 50-60 % per annum.The estimated size of the organized bread industry is about 50 bn and is growing at a rapid rate of 14-15% per year.
The bakery market in India is estimated at more than INR 210 billion and is still the cheapest form of readyâ€toâ€eat food. The bakery industry is one of the largest among the processed food industries in India. In fact, India is the second largest producer of biscuits after the U.S. The two major bakery products, viz. bread and biscuits account for 90 percent of the total bakery products.
The annual production of bakery products (organized sector), which includes bread, biscuits, pastries, cakes, buns, rusk etc., is estimated at 4.7 million tonnes.
